Stracchino cheese is a fresh cheese mainly produced in the Northern part of Italy
Its origin dates back to the Middle Age and the name, which means “tired”, comes probably from the fact that it was made with the light milk of the cows coming back from the long trip of the transhumance.
It is a light and fresh cheese, white and soft, used alone or as an ingredient for other dishes such as risotto, piadina and focaccia.
